Aloo paratha is a popular Indian flatbread that is filled with spiced mashed potatoes and then cooked on a griddle until golden brown. It is a delicious and filling meal that can be enjoyed for breakfast, lunch or dinner. Here is a simple recipe to make aloo paratha at home:
Ingredients:
- 2 cups whole wheat flour
- 1 cup boiled and mashed potatoes
- 1 small onion, finely chopped
- 2 green chillies, finely chopped
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon red chilli powder
- 1/4 teaspoon garam masala powder
- Salt to taste
- Water, as needed
- Oil or ghee, as needed for cooking
Instructions:
- In a large mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water and knead until you have a smooth and soft dough. Cover the dough and set it aside for at least 15 minutes.
- In a separate mixing bowl, combine the mashed potatoes, chopped onion, chopped green chillies, cumin powder, coriander powder, red chilli powder, garam masala powder, and salt. Mix well to combine.
- Divide the dough into equal-sized balls. Take one ball and roll it into a small circle. Place a tablespoon of the potato filling in the center of the circle.
- Bring the edges of the circle together and seal the potato filling inside the dough. Flatten the dough ball between your palms and dust with flour.
- Roll out the dough ball into a flat disc with a rolling pin, taking care not to let the potato filling escape.
- Heat a griddle or a tawa over medium heat. Place the rolled-out paratha on the hot griddle and cook until bubbles form on the surface.
- Flip the paratha and cook the other side until golden brown. Brush with oil or ghee as desired.
- Repeat the process with the remaining dough balls until you have made all the parathas.
- Serve hot with yogurt, pickle or chutney.
